Upon receiving the Matfer Bourgeat pan, I started by seasoning it according to the brand’s specific directions, taking note of the ease of the process. I fried some eggs, which wanted to stick a lot more than last time but not too badly, and seared some steak, which turned out with a great crust. Just like the Cook’s Illustrated team, the first thing I cooked was a couple of fried eggs, which slipped around the pan with ease. Once that round is finished, simply wipe out the pan with paper towels, heat a bit more oil over medium-high heat and give the pan one more thorough wipe with paper towels.

But I’m still interested in whether different types of carbon steel material also could be the cause for warping issues in some brand carbon steel pans. Black carbon steel is a natural mineral material free of any harsh chemicals or coatings, and is PTFE and PFOA free.The next day I re-seasoned it in the oven (I was out of potatoes to peel) with a Crisbee Stik three times, and got it looking good again.

After reading Cooks Ilustrated reviews on carbon steel pans, I decided to give the winning pan a try. We do this to ensure that the wok heats up quickly when placed on the hob and cools down fast when the heat is removed, an essential requirement for stir-fry cooking.

So I would defintely say the thickness played a role in how easily the pan warped - but I’m not sure it’s the only reason. The handle of the Matfer pan is made exclusively from cast iron which has the advantage of being oven-safe. Meanwhile, its sloped sides and relatively short handle make it a great choice for sautéing and flipping; it also performed well when transferred to the oven from the stove, and when used purely as a baking vessel. The single-piece pan design is welded to the handle, eliminating the need for rivets and providing an innovative angled shape for efficient stirring and sauteeing. On the stove, the handle didn't get too hot to handle considering it was on the heat for 10 minutes.

Like all Smithey skillets, the interior features our signature polished finish that when seasoned is naturally non-stick and easy to clean.But as mentioned before, it’s not much compared to cast iron that offers very similar cooking abilities. As I was contemplating this, I remembered a similar thing happening to a newly seasoned cast iron pan.
